As the Resort Executive Chef you will actively contribute to the successful achievement of the organizational goals and link corporate policy and strategy with F&B Production across Madinat Jumeirah. You will ensure that all departments perform and maximize their potential, are individually profitable and sustainable whilst enhancing the image of the resort.
Your responsibilities will include:
- Overseeing the F&B Production processes, planning of menus and designing standard recipes to ensure consistent quality in food production, that meet guest expectations and contribute to the profitability of the hotel;
- Participating in the preparation of the Annual Business Plan to ensure the culinary operation is adequately represented;
- Ensuring that HACAAP and other local regulations are adhered to ensure the highest food hygiene standards;
- Liaising with purchasing to ensure prompt and efficient purchasing, food quality, issuing of supplies, stock control and inventory control;
- Liaising with Stewarding to ensure an adequate supply of equipment, and to ensure kitchen cleanliness and hygiene meet the required standards;
- Liaising with Engineering to ensure prompt and efficient repair and maintenance;
- Liaising with the Outlet Managers to monitor food quality, plan "specials" and to discuss operational problems;
- Providing creative culinary ideas to enhance the image and reputation of the culinary operation;
- Frequently verifying that the dishes served in the outlets meet guest expectations and hotel standards;
- Monitoring and analysing the menus and products of competitive restaurants and keeping up to date with international culinary trends to maintain a competitive advantage;
- Monitoring and controlling F&B Production P&L;
- Continuously developing ideas to increase the F&B Productions productivity;
- Driving and supporting a culture where colleagues, at every level are consulted, recognized, respected and rewarded accordingly.
To move into this position you will draw on your 2 years plus experience gained as an Executive Chef in a large multi-outlet deluxe hospitality operation, your experience with large banqueting operations and your experience budgeting for large scale projects and operations. You will have a highly developed Executive Chef skill set, strong interpersonal and influencing skills as well as the ability to work well under pressure.
You will be educated to degree-level or above in a relevant discipline with appropriate professional qualifications and up to date professional knowledge.
